Refreshing Strawberry Smoothie

1 cup frozen strawberries
½ cup frozen sliced peaches
1 cup yogurt
1¼ cup coconut water

1. Place all ingredients in base of Power Chef® System fitted with blade attachment. Replace cover and pull cord until smooth.

Green Tea Smoothie

Yields 2 servings
Serving size: 1½ cups
Prep time: 5 minutes

1½ cup green tea, chilled (made with six tea bags)
2 cups frozen mixed berries
3 tbsp. honey

1. Place all ingredients in base of Power Chef® System fitted with blade attachment. Replace cover and pull cord until well combined and smooth.

Tropical Sunset Smoothie

Yields 2 servings
Serving size: 1½ cups

1 cup frozen raspberries
½ cup frozen mango
½ cup pineapple chunks
½ cup pineapple juice
1 ½ cup coconut milk

1. Place all ingredients in base of Power Chef® System fitted with blade attachment. Replace cover and pull cord until well smooth.

Peach Cobbler Smoothie

Yields 2 servings
Serving size: 1½ cups
Prep time: 5 minutes

1 cup frozen sliced peaches
2 frozen bananas, peeled & sliced
2/3 cup plain of Greek yogurt
¼ tsp. cinnamon
Pinch of ground ginger
Pinch of ground nutmeg

1. Place all ingredients in base of Power Chef® System fitted with blade attachment. Replace cover and pull cord until mixture is smooth.

Chocolate Covered Strawberry Smoothie

Yields 2 servings
Serving size: 1½ cups
Prep time: 5 minutes

2 cups frozen strawberries
½ cup yogurt
1 cup reduced-fat (2%) milk
1 tbsp. chocolate hazelnut spread

1. Place all ingredients in base of Power Chef® System fitted with blade attachment. Replace cover and pull cord until smooth and no large lumps remain.

Blackberry Apple Smoothie

Yields 2 servings
Serving size: 1½ cups
Prep time: 5 minutes

2 cups frozen blackberries
¾ cup apple cider
1 gala or fuji apple, peeled & cubed
1 5-oz./140 g container nonfat lemon yogurt

1. Place blackberries and apple cider in base of Power Chef® System fitted with blade attachment. Replace cover and pull cord until smooth.
2. Add remaining ingredients and continue pulling cord until well combined and no large lumps remain.

Breakfast Coffee Banana Smoothie

Yields 2 servings
Serving size: 1½ cups
Prep time: 5 minutes

2 frozen bananas, peeled & sliced
1 cup Greek yogurt, plain or vanilla
1 cup reduced-fat (2%) milk
1½ tbsp. instant coffee

1.  Place all ingredients in base of Power Chef® System fitted with blade attachment. Replace cover and pull cord until smooth and no coffee granules remain.

CINNAMON HOT CHOCOLATE

Serves: 16
Serving Size: about 2 tbsp.
Prep time: 5 minutes
Cook time: 0 minutes

Ingredients:

1 cup unsweetened cocoa powder

1½ cups brown sugar

2 tbsp. DIY Cinnamon-Vanilla Seasoning Blend (recipe here)

Directions:

  1. In a small bowl stir, together cocoa powder, brown sugar and DIY Cinnamon-Vanilla Seasoning Blend.
  2. Transfer to a Counterscaping Dry Seasoning Container. Cover and store in a cool dark place up to 6 months.

For Hot Chocolate:
Microwave 1 cup milk and 1 tbsp. of the Cinnamon Hot Chocolate Mix in a microwave safe mug 1 minute or until hot; do not boil. Stir until hot chocolate mix dissolves. Garnish with whipped cream or marshmallows.

For Mocha Coffee:  
Place 1 tbsp. of the Cinnamon Hot Chocolate Mix in a mug of your favorite coffee; stir well until dissolved.

LIME-GINGER FIZZ

Yield: 4

Ingredients

  • 1 cup sugar
  • 2 tbsp freshly grated ginger
  • 1 cup water
  • 1 cup lime juice (approximately 8 limes)
  • 16 ounces plain seltzer

Instructions

  1. In the Micro Pitcher combine sugar, ginger and water; microwave using high power 1 minute. Stir and microwave 1 additional minute.
  2. In a pitcher, combine simple syrup, lime juice and seltzer. Serve over ice.

ORANGE CRANBERRY SANGRIA

Ingredients

  • 1 cup red wine
  • 1/2 cup canned jellied cranberry sauce
  • 1/2 cup orange juice
  • 3 orange slices
  • 4 slices fresh gingerroot
  • 1 cinnamon stick
  • 5 whole cloves

Instructions

  1. In the base of the Quick Shake® container, add wine and cranberry. Secure Quick Shake® cover and shake well until cranberry is dispersed. Add orange juice, orange slices, gingerroot, cinnamon stick, and whole cloves. Secure Quick Shake® cover.
  2. Shake until well combined. Refrigerate two hours, up to 24 hours.
  3. Strain before serving. Refrigerate up to three days.

FROZEN STRAWBERRY KIWI MOJITO

Yield: 2

Serving Size: 6 ounces

Ingredients

  • 1¼ cup water, divided
  • ½ cup sugar, divided
  • 1 cup fresh strawberries, stems removed
  • 3 fresh kiwi, peeled, cut in quarters
  • 8 fresh mint leaves
  • 2 oz./60 g white rum (optional)

Instructions

  1. In the 2-cup/500 mL Micro Pitcher, stir together 1 cup of the water and ¼ cup of the sugar. Microwave on high power 45 seconds or until sugar is dissolved; set aside.
  2. In the Power Chef® System with blade attachment, add strawberries; pour in half of the sugar water. Place cover on Power Chef® System and pull cord until mixture is pureed. Transfer mixture to a Freeze-It® Medium Shallow Rectangular Container . Freeze 6 hours or overnight.
  3. Rinse Power Chef® and blade attachment. Reassemble and add kiwi, remaining sugar water, and 4 mint leaves. Place cover on Power Chef® and pull cord until mixture is pureed. Transfer mixture to a Freeze-It® Medium Shallow Rectangular Container . Freeze 6 hours or overnight.
  4. Meanwhile make the simple syrup. In the 2-cup/500 mL Micro Pitcher stir together remaining ¼ cup water, ¼ cup sugar, and mint leaves. Microwave on high power 45 seconds or until sugar is dissolved. Refrigerate until ready to use.
  5. Remove containers from freezer; let stand 10 minutes. Using a butter knife, gently break frozen fruit mixtures into 2 to 3ʺ/8 cm pieces. Place 2 to 3 frozen strawberry pieces into the hopper of the Grate Master® Shredder with Ice Shaver Cone. Place bowl in front of cone to catch shaved ice. Turn handle to process. Repeat with remaining strawberry ice; set aside. Repeat with kiwi ice, using a separate bowl; set aside.
  6. Divide shaved strawberry ice evenly between two glasses; top each with half of the kiwi shaved ice. Pour half of the mint sugar syrup and half of the rum into each glass. Serve immediately.

5 QUICK SUMMER VEGAN RECIPES WORTH TRYING

Black Bean Burgers

Serves: 4

Serving size: 1 burger

Prep time: 15 minutes

Cook time: 18 minutes

Total time: 33 minutes

15-oz./425 g can black beans, strained

¾ cup plain breadcrumbs

1 red bell pepper

1 tsp. garlic powder

2 tbsp. cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

  1. In base of Power Chef® System, fitted with the blade attachment, place all ingredients, cover and pull cord until chunky and coarsely processed.
  2. Divide mixture into four equal portions. Roll the mixture into a ball then press down between hands to make a tight patty.
  3. Place 2 patties at a time in MicroPro® Grill and cover in grill position, so the cover is touching the food.
  4. Microwave on high power 8 minutes, flip and microwave on high power an additional 2 minutes.
  5. Now that your MicroPro Grill is hot, it requires less cooking time for additional patties. Microwave remaining patties for 6 minutes, flip and microwave an additional 2 minutes.
  6. Top with desired toppings and serve.

Crispy Grilled Tofu

Serves 4

Serving Size 1

Prep Time: 10 minutes

Cook time 20 minutes

Total time: 30 minutes

14 oz./415 g extra firm tofu, drained and patted dry

1 cup panko

2 tsp. garlic powder

2 tsp.  turmeric

2 tsp. cumin

1 tsp. kosher salt

  1. Cut tofu crosswise to yield 4 patties.
  2. In a medium bowl, combine panko and the remaining ingredients.
  3. Coat each piece of tofu with panko mixture.
  4. Place two pieces of tofu into base of MicroPro® Grill and place cover in grill position.
  5. Microwave on high power 10 minutes. At the end of cooking time, uncover, flip tofu, replace cover in grill position and place back into microwave and cook for additional 5 minutes on high power.
  6. Repeat cooking steps with remaining two pieces of tofu. Serve with favorite dipping sauce.

Crispy Chickpeas

Serves 4

Serving size ¾ cup

Prep Time: 10 minutes

Cook Time: 15 minutes

Total time: 25 minutes

Two 15-oz./425 g can chickpeas, drained

1 tbsp. extra virgin olive oil

2 tsp. paprika

2 tsp. cumin

2 tsp. coriander

1 tsp. pepper

2 tsp. kosher salt

  1. Place chickpeas in medium bowl and add olive oil. Add remaining spices, seal and shake to evenly coat.
  2. Place chickpea mixture into base of MicroPro® Grill and cover in grill position. Make sure the cover is touching the chickpeas.
  3. Microwave on high power 10 minutes.
  4. At the end of cooking time, uncover and stir chickpeas. Replace cover in grill position and return to microwave to cook on high power for an additional 5 minutes.

Smoothie Bowl

Serves: 2

Serving Size: 1 cup

Prep Time: 15 minutes

Cook Time: 5 minutes

Total time: 20 minutes

1 cup mixed berries

1 frozen banana, quartered

¾ cup coconut milk

Toppings of choice (shredded coconut, chia seeds, slivered almonds)

  1. Place mixed berries and banana in base of Power Chef® System, fitted with the blade attachment. Cover and pull cord to puree.
  2. Add milk and continue pulling cord until mixture is smooth.
  3. Serve with desired toppings.

WE LIKE PUMPKIN A LATTE

Preparation

Yield: 6 cups

Ingredients

  • ¾ cup pumpkin puree
  • 4 cups reduced-fat (2%) milk
  • 3 tbsp. instant coffee
  • ¼ cup granulated sugar
  • 1 cup heavy cream

Instructions

  1. Whisk together pumpkin puree, milk, sugar and instant coffee in Stack Cooker 3-Qt./3 L Casserole. Cover and microwave on high for 5 minutes.
  2. Meanwhile, pour 1 cup heavy cream into base of Power Chef. Cover with Whip Accessory and turn handle until stiff peaks form. Whisk whipped cream into hot milk mixture and ladle warm into cups.
